Geared toward strengthening of food safety management system, Kikay’s Carinderia in Batangas City received a seminar on Basic Food Hygiene (BFH) and Food Safety Hazards (FSH) from the Department of Science and Technology (DOST)-Batangas held at the company’s store, Brgy. Banaba South, Diversion Road, Batangas City, Feb. 9-10.
The seminar on BFH covered topics on sanitary permits, health certificates, quality and protection of food, primary production, establishment (design of facilities and equipment), training and competence, establishment maintenance, cleaning and disinfection, pest control, personal hygiene, control of operation, product information and consumer awareness, and the special provisions of P.D. 856.
Meanwhile, topics discussed under FSH were the types of food hazards (physical, biological, and chemical) and their implications to food processing, as well as the control measures for the food safety hazards. Diagnostic examinations were also conducted to assess the knowledge gained by the participants.
Proper food handling and proper food servicing operations as required by law were highlighted during the discussion. Participants were also asked about their roles and existing practices to prevent foodborne diseases and practices in serving the food.
The DOST-CALABARZON Food Safety Team (FST) members, Mr. Mhark Ellgine A. Libao, Mr. John Maico M. Hernandez, and Ms. Anna Marie M. Marasigan, served as resource speakers of the training. The DOST Unified Food Safety Training Modules were the reference materials used during the seminar. The company, on the other hand, thanked DOST-Batangas for the technical assistance they received.#
